Miracle fruit, also known as Synsepalum dulcificum, is a small red berry native to West Africa. The fruit contains a protein called miraculin, which temporarily alters the perception of taste. When the fruit is consumed, sour and bitter foods taste sweet for up to an hour afterwards. This property has led to miracle fruit being used as a natural sugar substitute and as a novelty fruit for flavor-tripping parties and taste experiments.
